How hard it is to set up a food truck business in Japan? I heard you need to pay the Yakuza, is that true? Also which kind of permits would I need? Thanks in advance.

Depending on where the business is... there is a chance you would have to pay yakuza.
You would need health permits from the city, driver's license for the truck and lots more, most likely.
Japan loves permits and rules.

I see. Well I don't live there yet so setting up there and opening up the business must be pretty tough. What kind of visa would I need for that?

Business investor visa + big lump of cash + experience in the business + two full time Japanese staff.
Those are immigration rules.
